    Chicken in Tomato Coconut Sauce

    List of Ingredients


    • 2 boneless skinless chicken breasts
    • 1c. onion, diced
    • 1c. green bell pepper, diced
    • 1T garlic, minced
    • 1 tsp red pepper flakes
    • 2c tomatoes, chopped
    • 1 c coconut milk
    • 1/4c scallions, sliced
    • 1/4c chopped fresh cilantro
    • 2T fresh lime juice
    • salt to taste


    Instructions


    1. Saute seasoned chicken in oil in a large saute pan over medium high heat until browned on both sides, about 4 minutes.
    2. Add onions, bell pepper, garlic and red pepper flakes. Cover and cook until onion is translucent about 3 minutes.
    3. Stir in tomatoes and coconut milk; cover and cook until tomatoes begin to break down, 5-6 minutes. Add scallions, cilantro, and lime juice. Cover and simmer 2-3 minutes.
    4. Season with salt. Garnish with cilantro and lime.
