Chicken in Tomato Coconut Sauce

List of Ingredients
- 2 boneless skinless chicken breasts
- 1c. onion, diced
- 1c. green bell pepper, diced
- 1T garlic, minced
- 1 tsp red pepper flakes
- 2c tomatoes, chopped
- 1 c coconut milk
- 1/4c scallions, sliced
- 1/4c chopped fresh cilantro
- 2T fresh lime juice
- salt to taste
Instructions
- Saute seasoned chicken in oil in a large saute pan over medium high heat until browned on both sides, about 4 minutes.
- Add onions, bell pepper, garlic and red pepper flakes. Cover and cook until onion is translucent about 3 minutes.
- Stir in tomatoes and coconut milk; cover and cook until tomatoes begin to break down, 5-6 minutes. Add scallions, cilantro, and lime juice. Cover and simmer 2-3 minutes.
- Season with salt. Garnish with cilantro and lime.
