Island Pork Tenderloin

List of Ingredients
- 2 pork tenderloins, trimmed
- Rub:
- 1T. paprika
- 1T. chili powder
- 1T. dried oregano
- 1 tsp kosher salt
- 1/2 tsp red pepper flakes
- Basting Sauce:
- 3/4 c orange juice
- 2T lime juice
- 1T garlic, minced
- 1 tsp kosher salt
- 1 habanero or serrano chile, seeded and minced
- 2T honey
- 1T olive oil
Instructions
- Preheat broiler to high with rack in the center of the oven.
- Rub Tenderloins with rub and massage into the meat. Place on a wire rack over a cookie sheet.
- Combine juices, garlic, salt, and chile for the basting sauce. Broil pork 3 minutes, baste with sauce, and broil 5 more minutes
- Flip meat over; baste, and broil an additional 12-15 minutes, basting twice during that time. When pork reaches 145 in the thickest part, remove from oven and tent with foil and let rest 5 minutes. Slice into 2" thick steaks.
