Mojo-Brined Pork Chops

1/2 cup brown sugar
1/4 cup kosher salt
2 cups hot water
4 cups ice
juice and rind of 2 oranges and 1 lime
4 pork chops
Rub
2T paprika
1T dried oregano leave
2 tsp ground cumin
1 tsp red pepper flakes
Recipe
Dissolve sugar and salt in hot water in a large resealable bag; stir in ice cubes, citrus juices, and rinds. Submerge chops in liquid, squeeze air out and seal. Refrigerate 1-2 hours. Preheat grill to medium high; remove chops from brine and pat dry with paper towels. Combine spices for the rub and coat both sides of brined chops. Grill chops to an internal temp of 145 3-5 minutes per side. Remove from grill and rest 5 minutes.
