Tomato-Broccolini Salad

- 1/2 bunch broccolini
- 2T. red wine vinegar
- 2T. olive oil
- 1 tsp. honey
- 1 tsp. dijon mustard
- salt to taste
- 1 1/2 cups cherry or grape tomatoes, halved
Instructions
- Cook broccolini in a large pot of boiling salted water until tender, 3 minutes. Drain, chop, and set aside.
- Whisk the vinegar, oil, honey, and mustard together in a bowl until blended, then season with salt.
- Toss tomatoes and broccolini in vinaigrette before serving.
