Roasted Red Potatoes

List of Ingredients
- 1lb small red potatoes
- 1T olive oil
- 1/2 tsp salt (to taste)
- 1/8 tsp pepper (to taste)
- 2 T parmesan cheese (to taste)
Instructions
- Cut potatoes into 1/4" slices. Toss with oil. Place in a single layer in a greased 13x9 baking pan. Sprinkle with salt and papper and cheese. Cover tightly with foil. Bake at 350 for 40 minutes or until tender.
