    This is sooo good and LIGHT

    List of Ingredients




    2 cups 1% low-fat cottage cheese
    3/4 cup frozen egg substitute, thawed
    1/2 cup light process cream cheese product
    1/2 cup sugar
    1/4 teaspoon vanilla extract
    Vegetable cooking spray
    1/3 cup vanilla low-fat yogurt
    1 tablespoon sugar
    1/6 teaspoon lemon juice

    Recipe



    Combine first 5 ingredients in container of an electric blender, cover and process 1 minute or until smooth, Pour mixture into a 9 inch pieplate coated with cooking spray. Bake at 300 for 35 minutes or until eddges are set.
    Combine yogurt, 1 tablespoon sugar, and lemon juice; stir well. Spread evenly over pie. Bake at 300 an additional 5 minutes. Cool 15 minutes. Cover and chill at least 2 hours. Garnish with mint leaves if desired. .................................
