- 1 tb olive oil
- 1 medium onion, chopped
- 1/2 cup sliced celery
- 1 clove garlic, minced
- 3/4 cup water or low sodium chicken broth
- 1/4 cup dry white wine or apple juice
- 2 14 ounce cans tomatoes, with liquid
- 1 cup frozen kernel corn
- 1 pound thawed or fresh pollock fillets
- 1/2 tsp crushed oregano
- 1/2 tsp crushed thyme
- 1/8 tsp crushed hot pepper flakes or ground black pepper
Instructions
- Heat oil in a large pot and saute onion and garlic until tender, adding celery slices just as the onion starts to turn opaque. Add liquids and tomatoes and reduce heat to simmer for 5 ninutes.
- Cut fish into bite sized pieces, add to simmering pot along with frozen corn and the spices. Cover and cook about 15 minutes, until fish flakes easily with a fork. Cook about 5 minutes longer if you like your fish on the very firm side.
