2 c all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tbsp orange zest or granules
1 egg or egg sustitute
3/4 cup orange juice
1/4 cup vegetable oil
1 tbsp skim milk
1 tsp vanilla extract
Recipe
Preheat oven to 375 F and prepare 12 muffin cups by lining with paper liners or spraying with baking spray. In a medium bowl, combine dry ingredients, including the orange zest or granules, stir to combine well. In a small bowl, mix together all the wet ingredients, pouring into the dry ingredients and mixing only until just moistened. Spoon into muffin cups, filling each about half full. Bake about 18 minutes, or until golden brown. Allow to cool in pan about 10 minutes before removing and storing. Can be frozen and/or warmed in the microwave for warm breakfast muffins.
