Requires one 9 inch prebaked deep dish pie shell

4 red ripe tomatoes, sliced about 1/2 inch thick
10 fresh basil leaves, about 1 tb dried and crumbled
1/2 cup chopped green onion
1 prebaked 9 inch deep dish pie crust
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayonaise
salt and pepper
Recipe
Preheat oven to 350 F. Place tomato slices in a single layer, in a colander, in the sink. Sprinkle with salt and allow to stand and drain for 10 minutes. Layer tomato slices, basil leaves and green onion in the pie shell, sprinkle with salt and pepper to taste. Combine the mayonaise and grated cheeses and spread over the tomatoes in the pie shell. Bake about 30 minutes or until lightly browned. Serve warm
