Tomato Gravy

List of Ingredients
1/4 cup peanut oil
1/4 cup all purpose flour
1/4 cup onion, finely chopped
1/4 cup bell pepper, finely chopped
1 can (14.5 ounces) diced tomatos, drained and chopped
1 small can tomato sauce
Water to dilute gravy
Salt to taste

Cook flour in peanut oil on medium heat, whisking frequently until flour is color of a paper bag (or color you want your gravy to be). Add onions and bell pepper and cook, stirring often, until tender. Add diced tomatos and cook on medium heat for two minutes. Add tomato sauce and cook for two minutes or until heated through. Add water to reach desired thickness. Salt and pepper to taste and cook on a low fire for 15 to 20 minutes.
Serve over biscuits cut in half.
***For less of a tomato taste, you can eliminate the tomato sauce and add the liquid from the diced tomatos and enough water to reach the desired thickness of gravy.
