    These truffles need to be rolled in confectioners sugar (or cocoa powder) more than once. The truffle is moist and will absorb the powder. For best results, store in a container with powdered sugar or cocoa powder.

    List of Ingredients




    1/4 cup evaporated skimmed milk
    1/4 cup light corn syrup
    2 teaspoons instant coffee powder
    1/2 teaspoon orange extract
    16 graham crackers (2 1/2" squared)
    1/2 cup unsweetened cocoa powder
    Confectioners sugar, for garnish
    Cocoa powder, for garnish

    Recipe



    In small saucepan, over medium heat, combine evaporated milk, corn syrup and instant coffee; stir constantly until coffee dissolves. Remove from heat; add extract and set aside.

    In plastic bag, using rolling pin, crush graham crackers into medium-fine crumbs.

    In large bowl, combine crumbs and cocoa powder; stir milk mixture into crumb mixture (mixture will be crumbly); press together with hands.

    Using dampened hands, shape equally into 16 balls. On wax paper, roll balls in confectioners sugar or cocoa, if desired.
