    1 cup fresh okra
    2 tablespoons peanut oil
    2 cups onion
    1 cup celery
    1 cup bell pepper
    1/4 cup Parsley
    6 cloves garlic, minced
    1 pound peeled, raw shrimp
    5 or 6 gumbo crab halves
    1 can diced italian tomatoes
    Chicken broth, about 2 to 3 cups (enough for desired
    thickness)
    Salt and pepper to taste

    For roux:
    6 tablespoons flour
    6 tablespoons peanut oil

    Recipe



    Fry okra in 2 tablespoons of peanut oil. Stir to keep from sticking, until done.

    In another pot slowly make a dark roux. It should be slightly darker than a paper bag, more like light chocolate. When the correct color is obtained quickly add the onion, celery, bell pepper, parsley and cook until vegetables are clear and tender. Add garlic and cook for 30 seconds. Add chicken stock to make desired thickness of gumbo. Add shrimp and simmer for about 30 minutes. Add okra and simmer for another 15 minutes. Add tomatoes, salt and pepper to taste, and simmer for about 15 minutes longer.

    Serve over rice.
