    This is a great way to use extra kumquats from your tree. This recipe gives the kumquats a delightful sweet and sour taste!

    List of Ingredients




    1 quart kumprats (about 4 cups)
    4 cups water
    1 cup water
    2 cups sugar
    1/8 teaspoon cream of tartar

    Recipe



    Wash kumquats, prick a hole in the stem end of each and put into a pot with 4 cups water and slowly bring to a boil. Reduce to a simmer and cook until fruit is tender - about 10 - 12 minutes. Drain.

    Bring 1 cup water to a boil and stir in sugar until dissolved. Add cream of tarter and boil until syrup reaches 238 degrees, then add kumquats and cook slowly for about 10 minutes. Remove from syrup.

    When cool enough to handle, roll each one in granulated sugar and store.

    Storing the rolled kumquats in granulated or powderded sugar gives them an extra sweetness!
