    Serve fresh pesto sauce and warm bread with this dish.

    List of Ingredients




    6 Garlic cloves, minced
    1/3 Cup packed fresh basil leaves
    1/2 Teaspoon grated lemon zest
    1 Tablespoon fresh lemon juice
    2 Teaspoons olive oil
    2 Chicken breasts with skin on

    Recipe



    Combine the garlic, basil leaves, lemon zest and lemon juice in a food processor. With the machine running. drizzle the oil throught the feed tube to form a paste. Gently lift the skin from the breast of the chicken and spread the paste under the skin to cover the meat. Set the chicken, skin side up in a glass dish on the middle oven rack. Roast in a 400 degree oven for about 45 minutes or until done. Serve warm.

    If you want a sauce to accompany this dish pour the fat from the roasting pan. Combine 1 cup white wine, 1 teaspoon chopped fresh basil, 2 garlic cloves, minced. Bring to a boil, stirring occasionally to scrape the browned bits from the bottom of the pan and cook until the sauce is reduced by about half, about 5 minutes. Stir in 1/4 teaspoon and 1/8 teaspoon freshly ground pepper. Serve.
