This is a takeoff of the original recipe I found.


List of Ingredients




1 bag baby spinach
1/2 small red onion, thinly sliced
1 can mandarin oranges OR
1 fresh navel orange, peeled and separated into chopped sections
1/3 cup roasted walnuts
1/2 pound bacon, fried crisp and crumbled.

DRESSING:
2 Tablespoons orange juice
2 Tablespoons white wine vinegar
2 Tablespoons virgin olive oil
2 Teaspoons honey
2 Teaspoons Dijon mustard

Recipe



Toss spinach, onion, orange sections, walnuts and bacon together. Whisk together all dressing ingredients. Pour over salad and serve.
