Recipe Introduction
You can incorporate different ingredients in this basic recipe to make your favorite flavor hummus you purchase in the store.
List of Ingredients
2 large garlic cloves
2 cups cooked chick peas (garbanzo beans) with reserved liquid
or 2 cups canned chick peas, drained
2 tablespoons plain yogurt and more if needed
1/4 cup fresh lemon juice
2 - 3 tablespoons tahini* (can use smooth peanut butter if
tahini isn't available.
2 - 3 tablespoons olive oil
1/2 teaspoon ground cumin
Salt to taste
*Tahini is a sesame paste used in Middle Eastern cooking, available in the imported foods section of supermakets. Recipe
Turn on a food processor, fitted with the metal blade and drop in the garlic. When chopped, turn off machine and add chick peas. Process for about 30 seconds until roughly chopped and grainy.
Add 2 tablepoons yogurt, lemon juice, tahini, olive oil, cumin and salt to taste. Process smooth, scraping sides of bowl as needed. Thin to desired consistency with pea liquid (or additional yogurt if using canned chick peas).
Hummus is best if made ahead and refrigerated overnight. Taste and adjust seasonings.
Serve with whole wheat pita or vegetables.
