    This is a basic cream soup recipe that can be used as a base to make any number of cream soups by adding a couple of ingredients that you might like.

    List of Ingredients




    1/4 cup onion, finely chopped
    1/4 cup celery, finely chopped
    1/4 cup margerine or butter
    3 tablespoons flour
    1 cup chicken stock (or broth if stock is not available)
    Sea salt to taste
    White pepper to taste
    1 1/2 cups Half & Half or whipping cream

    Recipe



    In medium sauce pan, saute onion and celery in margerine (or butter) until tender. Stir in flour, salt and pepper. cook 1 minute, stirring constantly until smooth and bubbly.

    Gradually stir in chicken stock and Half & Half; cook until slightly thickened, stirring constantly. DO NOT BOIL.

    Makes about 3 cups.

    ***For Cream of Cauliflower soup:
    Steam cut florets of cauliflower until tender. Reserve some of the stock and place steamed cauliflower in food processor with some of the stock. Blend well. Do this until all of the cauliflower is blended and add to soup mixture along with 1 small jar of Cheeze Wiz. Heat through and serve.
