Orange-Carrot Soup

Recipe Introduction
This soup is delicious served either hot or cold.
List of Ingredients
5 c. sliced and peeled carrots
1 medium onion, finely chopped
3 c. vegetable broth
2 t. grated fresh ginger (optional)
3/4 c. orange juice
1/2 c. whipping cream
Salt and pepper to taste
Recipe
Cut peeled carrots into 1/4" rounds and place in crockpot. Add chopped onion, broth, orange juice and ginger (for a tangy soup). Cook on low for 10 - 11 hours or on high for 4 - 6 hours. When carrots are tender, blend to a smooth consistency. Add whipping cream and salt/pepper to taste. Stir until creamy.
If you would like you can make soup in a Dutch oven or heavy soup pot.
