Orange - Carrot Soup

This soup can be served either hot or cold.
List of Ingredients
5 cups carrots, sliced and peeled
1 medium onion, finely chopped
3 cups vege broth (chicken broth may be substituted)
2 teaspoons grated fresh ginger (optional)
3/4 cup orange juice
1/2 cup whipping cream
Salt and pepper to taste.Recipe
Peel and cut carrots into 1/4" rounds and add to crockpot along with chopped onion, broth, orange juice and ginger (for tangy soup). Cook on low for 10 - 11 hours on high or for 4 - 6 hours. When carrots are tender, blend to a smooth consistency. Add whipping cream and salt and pepper to taste. Stir until creamy.
