Oyster Soup

List of Ingredients
1 stick unsalted butter
1/2 cup chopped onion
2 cups chopped celery
1/2 cup chopped green onion
1/3 cup flour
2 pints Half & Half
1/4 cup chopped parsley
1 teaspoon white peper
1/4 teaspoon Tabasco
2 dozen oysters (with liquid)
Salt to tasteRecipe
Saute onion, celery and green onion in butter until tender (do not brown). Take off heat and stir in flour then cook for about 5 minutes. Slowly stir in Half & Half and cook, stirring frequently until thickened. Add white pepper and Tabasco. Simmer for about 5 minutes. Add parsley, oysters and liquid. cook until oysters are curled. Remove from heat and add salt to taste. Serve hot.
