    Stuffed Eggplant (Halves)

    List of Ingredients




    6 medium eggplants
    1 pound of small shrimp
    1 pound of lump crabmeat
    4 bell peppers, finely diced
    4 medium onions, finely diced
    1/2 cup parsley
    1/2 cup celery, finely diced
    6 pods garlic, minced
    Salt and pepper to taste
    Seasoned bread crumbs
    Paprika

    Recipe



    Boil eggplants until soft; dig out meat and save shells. While you are doing this, fry bell peppers, onion, celery altogether until limp. Add garlic and cook for 30 seconds. Add eggplant meat and let smother on medium fire until most water is cooked out, then add shrimp. Cook for another 20 minutes, then ut all of this in another bowl and fold in crabmeat and parsley. Let cool a little, then add enough bread crumbs to be firm enough to stuff shells. Sprinkle a little bread crumbs on top and paprka. Then sprinkle a little oil or oleo on top. Bake in 350 degree oven unti top begins to brown.
