    1 CUP BUTTER
    ¾ CUP SUGAR
    1 EGG SEPARATED
    ½ CUP ALMOND PASTE
    1 TSP ALMOND EXTRACT
    2 CUPS SIFTED FLOUR
    ¼ CUP SLICED ALMONDS

    PREHEAT OVEN TO 350 DEGREES. IN A LARGE BOWL WITH ELECTRIC MIXER ON MEDIUM SPEED, BEAT BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY.
    BEAT EGG YOLK WITH BUTTER MIXTURE.
    ADD ALMOND PASTE AND EXTRACT AND BEAT UNTIL SMOOTH.
    AT LOW SPEED, BEAT IN FLOUR JUST UNTIL COMBINED.
    PRESS INTO UNGREASED 8 X 8 PAN.
    BEAT EGG WHITE UNTIL FROTHY. BRUSH OVER TOP OF DOUGH.
    COVER WITH ALMONDS.
    BAKE FOR 30 MINUTES OR UNTIL GOLDEN BROWN.
    COOL AND CUT IN SMALL SQUARES.
