LACEY'S CHINESE ALMOND COOKIES
INGREDIENTS:
1 CUP SUGAR
1 CUP MARGARINE
2 EGGS (1 FOR DOUGH, 1 FOR BRUSHING THE TOPS)
1 TSP ALMOND FLAVORING
2 ½ CUPS FLOUR, SIFTED WITH: ¼ TSP BAKING SODA
36 ALMONDS
BEAT MARGARINE AND SUGAR TOGETHER UNTIL LIGHT. ADD ONE EGG AND THE ALMOND FLAVORING. MIX THOROUGHLY. ADD FLOUR, MIX GRADUALLY. CHILL FOR 30 MINUTES. ROLL INTO WALNUT-SIZED BALL WITH YOUR HANDS. PRESS FLAT ON UNGREASED COOKIE SHEET. BRUSH TOPS WITH BEATEN EGG AND PRESS AN ALMOND INTO THE CENTER. BAKE 20 MINUTES AT 300 DEGREES, THEN 10 MINUTES MORE AT 350 DEGREES.
