List of Ingredients
- 1 cup chopped broccoli
- 1 cup chopped cauliflower
- 1 cup carrots, sliced in thin diagonals
- 3 tablespoons olive oil
- 1/4 cup diced red pepper
- 2 cups snipped fresh chives or basil, if available
- 5-6 cherry tomatoes or 1 roma
- 2 tablespoons minced parsley (fresh is best)
- 1/2 cup onion, diced
- 1/2 pound angel hair pasta
Instructions
- Bring large pot of distilled wate rto boil.
- Blanchy broccoli, cauliflower, carrots and oinions for 3-5 minutes or until tender.
- Remove veggies with slotted spoon, rinse in cold water and pat dry.
- Return vegetable water to a boil. Add 1 tablespoon olive oil. Add pasta and cook until tender but firm, about 3-5 minutes.
- While pasta is coolking, heat remaining olive oil in large skillet. Add blanched vegetables, red pepper, seasoning and tomatoes. Saute 3-5 minutes.
- Drain pasta and transfer to large bowl. Toss with vegetables. Season with Bragg Liquid Aminos (or salt) and herb seasoning.
