Triple Layer Mint Bars
Ingredients:
Base:
1/2 cup melted margarine
1/2 cup icing sugar
1 egg
2 cups chocolate wafer crumbs
1/2 cup walnuts (optional)
Middle Layer:
1/4 cup margarine
2 cups icing sugar
2 tbsp milk
green food coloring
Top Layer:
1 cup mint chocolate chips
2 tsp margarine
Combine 1/4 cup melted margarine & 1/2 cup icing sugar. Beat 1 egg. Stir in wafer crumbs & nuts. Press evenly on bottom of 9" square pan. Chill.
Cream 1/4 cup margarine, 2 cups of icing sugar & the milk until fluffy. Add green food coloring to provide desired color. Spread evenly over 1st layer in pan. Chill.
Melt chips & 2 tsp. margarine in double boiler. Spread over 2nd layer. Chill until firm.
Makes about 2 dozen (depending on how big or small the squares are cut into).
Note: To ensure that the recipe turns out, fully chill the second layer. Also, do not melt the chocolate chips for too long or it will be a small disaster (they won't spread properly).
These are soooo good! I sometimes add them to vanilla milk shakes! I highly recommend that! The milk shake will turn out best if the squares are frozen well.
