1cup yellow corn bread mix
1/4cup minced onion
2tablespoons minced pimiento
1/4teaspoon salt
1/8teaspoon ground red pepper
1/8teaspoon black pepper
3/4cup boiling water
1can (9 ounces) tuna packed in water, drained

Recipe
1.Combine cornmeal mix, onion, pimiento, salt, red pepper and black pepper in small bowl.
2.Slowly stir water into cornmeal mixture. (Mixture will be thick.) Stir in tuna.
3.Pour oil into large skillet to depth of 1/2 inch; heat over medium heat until hot (about 375°F on deep-fry thermometer).
4.Drop cornmeal mixture by tablespoonfuls into hot oil. Fry over medium heat 1 minute per side or until golden brown. Drain on paper towels.
Serving Suggestion: Serve fritters with cucumber ranch salad dressing or tartar sauce
