Chocolate Caramel Bars

Recipe Introduction
Toffee-flavored shortbread topped with chocolate,chewy caramel and nuts. This is a real winner.
List of Ingredients
- Crust:
- Non stick cooking spray
- 2c. flour
- 3/4c. (1 1/2 sticks) butter, slightly softened
- 1/2c. packed brown sugar
- 1/4t. salt
- 1c. (6oz) semisweet or milk chocolate chips
- Caramel:
- 3/4c. (1 1/2 sticks) butter
- 1c. packed brown sugar
- 1/3c. Karo light or dark corn syrup
- 1t. vanilla
- 1/2c. chopped walnuts
Instructions
- For crust: Preheat oven to 350. Spray 13x9x2 inch baking pan with cooking spray.
- In large bowl with mixer at med. speed, beat flour, butter, brown sugar and salt until mixture resembles coarse crumbs. Press firmly into prepared pan.
- Bake 15 minutes or until golden brown. Sprinkle chocolate chips over hot crust; let stand 5 mins. or until shiny and soft.
- Spread chocolate evenly; set aside.
- For Caramel: In heavy 2 qt. saucepan, combine butter, brown sugar, corn syrup and vanilla.
- Stirring frequently, bring to boil over med. heat. Without stirring, boil 4 minutes.
- Pour over chocolate; spread evenly. Sprinkle with walnuts. Cool completely.
- Refrigerate 1 hour to set chocolate; let stand at room temp. until softened.
- Cut into 2x1 inch bars. Store in tightly covered container at room temp.
- Makes: about 4 dozen bars
