Bacon Spoonbread*

- 6 cups milk
- 2 cups yellow cornmeal
- 2t. baking powder
- 1/2t. black pepper
- 6 large eggs, separated
- 8 strips cooked bacon, drained and crumbled
- 1/3 cup chopped fresh chives or 1 1/2 T. dried chives
- Topping:
- 6 strips bacon, cooked, drained, and crumbled
Instructions
- Preheat oven to 350. Grease a casserole dish.
- In a medium saucepan, heat milk and cornmeal over medium heat, stirring constantly, until mixture bubbles and thickens, 5 minutes. Remove from heat.
- Mix together baking powder, pepper, and egg yolks. Mix egg mixture into cornmeal mixture. Stir in bacon and chives.
- Beat egg whites at high speed until stiff, but not dry, peaks form. Fold one third beaten egg whites into batter. Fold in remaining egg whites.
- Pour batter into prepared dish. For topping, sprinkle bacon over batter.
- Bake spoonbread until golden and set, 45 to 50 minutes. Transfer dish to a wire rack to cool slightly.
