Easy Onion-Dill Bread

1 cup BREAKSTONE'S or KNUDSEN Cottage Cheese
1/4 cup water
1 Tbsp. butter
2-1/2 to 2-3/4 cups flour, divided
1 pkg. (1/4 oz.) fast-rising yeast
2 Tbsp. sugar
2 tsp. each onion flakes and dill weed
1 tsp. salt
1/4 tsp. baking soda
1 egg, beaten
Recipe
MIX cottage cheese, water and butter in small microwavable bowl. Microwave on HIGH 1-1/2 to 2 minutes or until mixture reaches 120°F to 130°F. Stir well.
MIX 1-1/2 cups of the flour, yeast, sugar, onion flakes, dill weed, salt and baking soda in large bowl. Add cottage cheese mixture and egg; mix well.
ADD 1 cup of the remaining flour; mix well. Place dough on lightly floured surface. Knead dough until smooth and elastic. Add additional flour if dough is too moist. Cover dough; let rest 10 minutes.
SHAPE dough into ball. Place in well-greased 2-quart baking dish; turn dough over so that top is greased. Cover with plastic wrap. Let rise in warm place about 45 minutes or until doubled. Uncover.
BAKE at 350°F for 50 minutes or until golden brown. Immediately remove from baking dish. Cool on wire rack.
Food Facts: Do not heat cottage cheese, water and butter above 130°F as this will kill the yeast and prevent the dough from rising.
