Spiced Apple-Walnut Bread

Whether you serve it warm from the oven with butter or thinly sliced with cream cheese, you can be sure this quick bread will please the whole family.

1/2 cup (1 stick) butter or margarine, softened
1 cup firmly packed brown sugar
2 large eggs
1 1/2 cups unsweetened applesauce
1 teaspoon vanilla extract
2 cups plus 2 tablespoons all- purpose flour
1 1/2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon salt
1 large baking apple, such as Granny Smith, peeled, cored, and chopped
1 cup chopped walnuts
1/2 cup raisins
Recipe
1. Preheat oven to 350°F. Grease a 9x5x3-inch loaf pan.
2. In a large mixing bowl, using an electric mixer set on high speed, beat butter until light and fluffy. Gradually add brown sugar, and continue beating until mixture is very light and fluffy. Reduce mixer speed to medium. Add eggs, 1 at a time, beating well after each addition; beat in applesauce and vanilla.
3. Reduce mixer speed to low. In a small bowl combine flour, cinnamon, baking soda, and salt. Beat flour mixture into egg mixture until just combined. Stir in apple, walnuts, and raisins.
4. Pour batter into prepared loaf pan; bake until a toothpick inserted in center comes out clean, about 1 hour 30 minutes.
5. Place pan on a wire rack to cool for 20 minutes. Using a knife, carefully loosen loaf from sides of pan; invert onto rack and turn top side up. Cool completely before slicing.
