Non stick cooking spray
2 cups (480mL) small red potatoes, cubed
1/4 cup (60mL) Mrs. Dash® Mesquite Grille 10-Minute Marinade
1 cup (240mL) onion, chopped
1 cup (240mL) green peppers diced
1 cup (240 mL) cooked turkey, cubed
1 cup (240mL) low fat egg – substitute
1/2 cup (120 mL) low fat grated cheddar cheese
Recipe
1. Spray an 8 inch (20cm) oven proof skillet with non stick cooking spray.
2. Spray potatoes with cooking spray until well coated, place them in preheated skillet and cook, turning often, until lightly browned and soft.
3. Add Mrs. Dash® Mesquite Grille 10-Minute Marinade, onion, and green peppers to potatoes with 2 Tbsp. (30mL) water. Continue to cook until vegetables are crisp-tender. Add cooked turkey and remove from heat.
4. Whisk egg substitute until foamy about 2 minutes.
5. Pour eggs over skillet mixture, top with cheddar cheese.
6. Bake, uncovered for 30 minutes in a preheated 350° F (177°C) oven. Serve immediately.
