- 1c. flour
- 2 eggs
- 1c. milk
- 1/2t. salt
- dash of pepper
- 1 lb. sausage links
Instructions
- Combine all ingredients except sausage in a blender and blend on high speed for 4 seconds.
- Turn off and scrape sides. Now blend again for about 1 minute. Refrigerate the batter at least 1 hour.
- Preheat oven to 400. Place links in skillet, sprinkle with 2T. water, cover tightly and cook over low heat until thoroughly cooked and water has evaporated.
- Put sausage in single layer in 6x10 greased dish and moisten with 2T. meat drippings.
- Be sure each sausage is an inch apart. Pour batter over sausage and bake 30 mins. or until pudding has risen over top of pan and is crisp and golden.
- Serve at once. Great with applesauce.
