    2 lb beef bones (up to 3 lbs)
    8 c water
    1 onion, unpeeled
    1 carrot, scrubbed & sliced
    celery leaves
    3 sprigs parsley
    6 whole peppercorns
    3 whole cloves
    1 ts crushed basil leaves
    1 clove garlic
    2 tb vinegar
    2 ts salt

    Recipe




    Brown bones slowly in a heavy pot. Add remaining ingredients and
    simmer, covered, for several hours. Strain broth and cool. Skim
    fat from top of stock.
