    List of Ingredients


    • 6 lb. chicken bones
    • 3c. chopped onions
    • 2c. chopped carrots
    • 2c. chopped celery
    • 1c. chopped leeks
    • 1T. whole white peppercorns
    • 1 bay leaf


    Instructions


    1. Place all ingredients in large stockpot and fill 3/4 with cold water, about 2 gallons.
    2. Bring to a boil, reduce heat to low and simmer 4 hours. Skimming every 30 mins. to remove impurities that rise to surface.
    3. Strain and continue to cook over med. heat for 30-45 mins. or until reduced to about 2 qts.
