List of Ingredients
- 6 lb. chicken bones
- 3c. chopped onions
- 2c. chopped carrots
- 2c. chopped celery
- 1c. chopped leeks
- 1T. whole white peppercorns
- 1 bay leaf
Instructions
- Place all ingredients in large stockpot and fill 3/4 with cold water, about 2 gallons.
- Bring to a boil, reduce heat to low and simmer 4 hours. Skimming every 30 mins. to remove impurities that rise to surface.
- Strain and continue to cook over med. heat for 30-45 mins. or until reduced to about 2 qts.
