Fillet of Beef in Mushroom Sauce

List of Ingredients
- 6 1/2T. butter
- 1 1/2T. flour
- 2c. beef broth
- 6 fillets of beef
- 1 lb. fresh mushrooms
- 1t. salt
- 1/8t. pepper
- 1/2c. madeira
- 2t. onion, chopped
Instructions
- Melt 1 1/2T. butter in saucepan, blend in flour and cook until browned.
- Gradually add beef broth, stirring to the boiling point. Cook over low heat 30 minutes.
- Skim any fat and strain. Measure 1 cup. Melt the remaining 5T. of butter in a skillet.
- Brown fillets quickly. Remove. Saute mushrooms in same pan for 5 minutes.
- Return fillets, add salt, pepper, madeira, onions, and brown sauce.
- Cook over low heat for 5-10 mins. depending on how well done you like your steak.
