Chocolate Peanut Butter Cups

- 1/3c. creamy or chunky peanut butter
- 1/3c. butter, softened
- 1 2/3 c. sifted confectioners sugar
- 1 pkg. (12oz) semisweet or milk chocolate pieces, melted
Instructions
- Place 36 (1 3/4 x 1 inch) foil or paper baking cups on tray or in miniature muffin cups.
- In medium bowl beat peanut butter and butter until blended. Gradually blend in sugar.
- Press with hands or roll 1/2 inch thick. Cut into 1 inch circles with cookie cutter.
- Spoon about 1/2t. melted chocolate into each foil cup to generoulsy cover bottom.
- Place a peanut butter circle on top of chocolate; gently push down to coat sides.
- Spoon additional chocolate into each cup to coat peanut butter mixture.
- Chill until firm. Store in refrigerator.
