Mexican Orange Candy

- 1c. sugar
- 1/4c. boiling water
- 2c. sugar
- pinch salt
- 1c. evaporated milk
- 1t. grated orange rind
- 1c. chopped nuts
Instructions
- Caramelize 1c. sugar to a rich amber color; add boiling water and boil, stirring occasionally until caramel is entirely dissolved.
- Turn into 3 qt. saucepan, add next 3 ingredients and cook to soft ball stage.
- Just before candy is done, add orange rind. Remove from heat and place in pan of cold water and cool.
- Beat until candy begins to stiffen; then stir in nuts and drop from teaspoon onto buttered waxed paper.
- Makes: 1 3/4 lb.
