Cherokee Casserole

- 1 lb. ground beef
- 1T. oil
- 1/2c. onion, chopped
- 1 1/2t. salt
- 1/8t. pepper
- 1/8t. garlic powder
- 1/8t. thyme
- 1/8t. oregano
- 1 small bay leaf
- 1 (20 oz) can crushed tomatoes
- 1 (10 oz) can cream of mushroom soup
- 1c. rice, pre-cooked
- Cheddar cheese
Instructions
- Brown ground beef in oil over high heat. Add chopped onions and reduce heat to medium, cook until tender.
- Stir in salt, pepper, garlic powder, thyme, oregano, bay leaf, crushed tomatoes, mushroom soup and rice.
- Bring all to a boil; reduce heat and simmer 5 minutes, stirring occasionally.
- Discard bay leaf. Spoon into a 1 1/2 qt. casserole dish.
- Sprinkle cheese on top of the casserole.
- Broil just until cheese melts.
