Chicken with Black Beans and Rice

Recipe Introduction
This is more like a main dish instead of a soup, but is great with
a salad and cornbread.
1 Tbsp olive oil
1 cup finely chopped onion
1 to 2 medium cloves garlic, peeled & minced
3 cups chicken broth
1 can chili style stewed tomatoes
2 to 3 cups cooked, diced chicken
1 1/2 cups black beans, drained
1/2 tsp salt
freshly ground pepper to taste
1/2 tsp cumin or to taste
1 cup long grain rice, uncooked
In large soup pot, heat olive oil over medium heat; add onion and
garlic. Saute 10 minutes. Add a few teaspoons chicken broth if
mixture becomes to dry. Add chicken broth, tomatoes, and spices.
Bring to a boil, reduce heat and simmer 10 minutes. Stir in chicken
and beans, simmer 10 minutes. Stir in rice and simmer 20 to 25
minutes. You may want to add more water or chicken broth if needed.
