Farmer's Casserole

List of Ingredients
- 3c. frozen hash browns (24 oz bag)
- 3/4c. shredded Monterey Jack cheese
- 3/4c. shredded cheddar cheese
- 1(4.5oz) can green chilies
- 1 c. diced ham or bacon
- 1/4c. sliced green onions
- 4 beaten eggs
- 1(12 oz) can evaporated milk
- 1/4t. pepper
- 1/8t. salt
Instructions
- Grease a 2 qt. square baking dish. Arrange potatoes evenly in bottom of dish.
- Sprinkle with cheeses, ham, green chilies, green onions.
- In medium mixing bowl combine eggs, milk, pepper, salt.
- Pour over potatoes. (This can be made 1 day in advance and served)Cover and chill several hours. or overnight.
- May freeze. Serving day: thaw completely. Bake uncovered in 350 oven for 40-45 minutes or until center sets.
- Let stand 5 mins. before serving. If you prefer extra cheese can be sprinkled on top during last 15 mins. of baking.
