    King Ranch Chicken

    2 chickens, cut up
    12 medium corn tortillas
    1 medium onion, diced
    1 bell pepper, diced
    2 tablespoons butter
    2 cups cheddar cheese, shredded
    1 1/2 teaspoons chili powder
    1/4 teaspoon garlic salt
    1 c cream of chicken soup
    1 c cream of mushroom soup
    16 oz stewed tomatoes
    Tabasco sauce

    Simmer chicken in lightly salted water until tender. Remove chicken
    pieces from water and reserve broth; let chicken cool slightly,
    then skin and bone and cut into bite-size pieces. Soak tortillas
    in broth about 15 minutes.

    Saute onion and bell pepper in butter and sprinkle over chicken.
    Place tortillas in a 4-quart casserole and top with chicken. Then
    layer other ingredients in this order: onion and bell pepper,
    cheese, chili powder and garlic salt, chicken soup, mushroom soup,
    and tomatoes mixed with Tabasco. Bake in a 375 degree oven 30
    minutes.
