LENTIL CASSEROLE

2 c water
1 c lentils
1 chopped onion
1/2 lb cheddar
8 oz tomato juice
1/2 t pepper
1/4 t salt
2 t thyme
1 c bread crumbs
Simmer lentils and water for 30 minutes.
In a bowl add lentils to onion, cheddar, tomato juice, pepper,
salt, thyme, and bread crumbs.
Mix together and bake in a casserole dish or loaf pan for 45 minutes
at 350.
