Layered Taco Casserole

- 1 lb. ground beef
- 2T. butter
- 1 medium onion, chopped
- 2T. diced green chilies
- 1c. (8 oz) tomato sauce
- 1 pkg. (14 oz) taco seasoning mix
- 1/2c. water
- 2 eggs
- 1c. milk
- 1 (6 oz) pkg. Fritos
- 8 oz. Monterey Jack, shredded
- 1c. sour cream
- 1/2c. grated Cheddar cheese
Instructions
- Brown beef and drain. Saute onion and pepper in butter and mix with meat. Combine tomato sauce, taco seasoning and water.
- Beat eggs, and milk, add to tomato sauce stirring constantly.
- Layer in 2 qt. casserole: Fritos, meat, sauce and Monterey Jack cheese. Repeat layers.
- Cook at 350 until done. Spread sour cream on top, then cheddar cheese.
- Cook until cheese is melted.
