If you like meatball subs, you'll love this tangy casserole. It has all the rich flavor of the popular sandwiches with none of the mess. Italian bread is spread with a cream cheese mixture, then topped with meatballs, spaghetti sauce and cheese. Served with a green salad, it's a hearty meal the whole family enjoys.
List of Ingredients
- 1/3c. chopped green onions
- 1/4c. seasoned bread crumbs
- 3T. grated Parmesan cheese
- 1 lb. ground beef
- 1 loaf (1 lb) Italian bread, cut into 1 inch slices
- 1 pkg. (8 oz) cream cheese, softened
- 1/2c. mayonnaise (do not use reduced fat or fat free)
- 1t. Italian seasoning
- 1/4t. pepper
- 2c. (8oz) shredded mozzarella cheese, divided
- 1 jar (28 oz) spaghetti sauce
- 1c. water
- 2 garlic cloves, minced
Instructions
- In a bowl, combine onions, crumbs and Parmesan cheese. Add beef and mix well.
- Shape into 1 inch balls; place on a rack in a shallow baking pan. Bake at 400 for 15-20 mins. or until no longer pink.
- Meanwhile, arrange bread in a single layer in an ungreased 13x9x2 inch baking dish.
- Combine cream cheese, mayonnaise, Italian seasoning and pepper; spread over the bread.
- Sprinkle with 1/2c. mozzarella. Combine sauce, water, and garlic; add meatballs.
- Pour over cheese mixture; sprinkle with remaining mozzarella.
- Bake, uncovered, at 350 for 30 mins. or until heated through.
- Yield: 6-8 servings.
