ONE DISH YAM DINNER

1 large or 2 small sweet potatoes, peeled, sliced 3/4 inch thick (18mm)
1 small white yam, about 1 pound (500g), peeled and sliced 1/4 inch thick (6mm)
2 large yellow onions, sliced
1/2 a head of a small green or red cabbage, core removed, shredded (optional)
4 slices of crisp fried bacon
1 package of frozen green peas, thawed
4 lamb or pork chops, large
24 oz spaghetti sauce , bottled
1/4 cup sweet red wine (optional)
salt
2 teaspoon ground pepper or dried hot pepper to taste
1/2 teaspoon garlic powder
1 tablespoon ground cumin
1 tablespoon ground coriander
2 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon ground cloves.
Mix the ground pepper, garlic powder, cumin, coriander, cardamom,
cinnamon and cloves in a small dish and set aside. Cook bacon. Save
1 tablespoon of the oil.
Use 1 tablespoon of the bacon oil to grease casserole dish or use
Oil to grease well a casserole dish.(about 5-6 guarts). layer
cabbage on bottom. layer white yam on top of cabbage. Sprinkle on
crumbled crisp bacon. Layer green peas. Layer onion . Layer Sweet
potato. Making sure to sprinkle some of the mixed seasonings on
top of cabbage with a pinch of salt. Sprinkle seasonings also on
yam,green peas, onions and sweet potato as they are laid out.
layer chops on top sweet potatoes. Sprinkle mixed seasonings on
chops.
Pour over sauce. pour over wine. Cover tightly, using lid or aluminum
foil and bake in moderate oven about 375degF/ 190 C / 5 gas about
1/2 hour or until chops and vegetables are tender. Remove cover,
let brown a bit on top if needed, adding a little water if bottom
is dry.
Note: In stead of cabbage I sometimes use sliced sweet peppers or
Italian peppers, cut into quarters lengthwise. Enough to cover the
bottom. I also some times use ripe plantain or boiled green banana
in place of the white yam or some times I use all and make sure I
add more sauce or water so that it does not dry out. Instead of
chops, you can use ground beef, pork sausages or chicken cutlets
or veal cutlets. With the chicken or veal I would use A Mushroom
sauce and white wine, But it is a versatile dish and does well with
either.
