Roast Beef Casserole

List of Ingredients
- 2c. leftover roast beef, chopped
- 1 large onion, chopped
- 1 green pepper, chopped
- 3 stalks celery, chopped
- 2T. butter
- 1 can water
- 1/2t. salt
- 1T. soy sauce
- few drops of Tabasco
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
Instructions
- Cook celery, onion, and pepper in 2 T. butter until clear.
- Add roast beef and cook several minutes. Stir in soups, water, salt, soy sauce and Tabasco.
- Pour in casserole and bake 30 minutes at 325.
- Allow 5 or 10 minutes more if it has been refrigerated.
- Serve over rice.
- This casserole freezes well.
