    Shoe Peg Corn Casserole

    1/2 cup grated sharp cheddar cheese
    1/2 cup finely chopped sweet onion
    1/2 cup finely chopped celery
    1/4 cup finely chopped bell pepper (you can mix red and green)
    1/2 pint (8 oz.) sour cream
    1 can cream of celery soup (undiluted)
    1 can (11-oz.) white shoe peg corn, drained
    1 can (14.5 oz.) French style green beans, drained
    1 tube Ritz crackers, crushed
    1/2 cup melted butter

    Mix first 8 ingredients; add pepper to taste. Pour into a 13x9
    glass or metal baking dish. Mix butter and Ritz crackers; spread
    over top of casserole. Bake at 325 degrees (uncovered) for 45
    minutes, or until bubbly and golden brown.
