    List of Ingredients


    • 3 med. unpeeled potatoes, sliced
    • 3 carrots, sliced
    • 3 celery ribs, sliced
    • 2c. fresh or frozen green beans
    • 1 med. onion, chopped
    • 1 lb. ground beef
    • 1t. dried thyme
    • 1t. salt
    • 1t. pepper
    • 4 med. tomatoes, peeled, seeded and chopped
    • 1c. (4 oz) shredded cheddar cheese


    Instructions


    1. In a 3 qt. casserole, layer half of the potatoes, carrots, celery, green beans and onion. Crumble half of the uncooked beef over vegetables.
    2. Sprinkle with 1/2t. each of thyme, salt and pepper. Repeat layers. Top with tomatoes.
    3. Cover and bake at 400 for 15 mins. Reduce heat to 350 bake about 1 hr. longer or until vegetables are tender and meat is done.
    4. Sprinkle with cheese; cover and let stand until cheese is melted.
    5. Yield: 6-8 servings.
