1/2 cup butter, softened

1 cup evaporated milk

2 cups all-purpose flour
1/2 tsp. salt
1/2 cup unsweetened cocoa powder
1 1/2 tsp. baking powder
1/2 cup butter, softened
1 cup confectioner's sugar
1/2 tsp. vanilla extract
1 cup marshmallow creme.

MAKES 4 DOZEN
* Preheat oven to 400.F (200.C). Lightly grease a cookie sheet.
* For the cookie crusts: In a large bowl, cream 1/2 cup butter or margarine and white sugar. Add egg, evaporated milk, and vanilla. Mix well. In a separate bowl, mix together flour, salt, cocoa powder, and baking powder. Add flour mixture slowly to sugar mix while stirring. Mix just until all ingredients are combined.
* Drop the dough onto the greased cookie sheet by rounded tbs.Leave at least 3 in. (7.5 cm) between each one.
* Bake for 6 to 8 minutes, until firm when pressed lightly with finger. Allow to col for at leats one hour.
* While the cookies are cooling, make the marshmallow filling by blending 1/2 cup butter or margarine, confectioner's sugar, vanilla extract, and marshmallow creme. Mix until smooth.
* Assemble the pies by spreading 1 to 2 tbs. of filling on the flat side of the cookie, then cover filling with the flat side of another cookie.
