    New England Crock-Style Baked Beans

    1 pound dry navy beans or dry northern beans, (2 1/2 cups)
    8 cups cold water
    1 cup chopped onion
    1/4 pound salt pork, chopped, or 6 slices bacon, cooked, drained, and crumbled
    1 cup water
    1/2 cup molasses
    1/3 cup packed brown sugar
    1 teaspoon dry mustard
    1/4 teaspoon pepper

    Rinse beans, drain. In a large saucepan or Dutch oven, combine
    beans and 8 cups water. Bring to boiling, reduce heat. Simmer,
    covered, for 1 1/2 to 2 hours or till beans are tender. Drain
    beans. In crockery cooker, combine drained beans, onion, and salt
    pork or bacon. Add 1 cup water, molasses, brown sugar, dry mustard,
    and pepper. Stir to combine. Cover, cook on Low setting for 10 to
    12 hours or on High setting for 5 to 6 hours. Stir before serving.
